Peanut Cups

Serve as a snack or with a favourite dessert.

Yield: 12 servings
Prep time: 30 minutes
Cook time: 5-8 minutes

 

Ingredients:

  • 2 tbsp corn syrup
  • ¼ cup brown sugar
  • ¼ cup 'Kernal' peanut butter ( smooth or crunchy)
  • 2 cups of crispy rice cereal
  • ¼ cup finely chopped 'Kernal' peanuts ( unsalted or salted)
  • 3 oz semi-sweet chocolate
  • ½ cup 'Kernal' peanut butter (smooth or crunchy)
  • 2 tbsp melted butter
  • Whole peanuts for garnish

 

Preparation:

  • Combine corn syrup, 1/4 cup peanut butter, brown sugar and butter
  • Stir in cereal and chopped peanuts
  • Press into the bottoms of 12 well greased muffin cups
  • Bake at 375 for 5-8 minutes
  • Cool for 5 minutes and remove from pans
  • Melt chocolate over low heat. Blend in remaining 1/2 cup peanut butter and stir over low heat, until smooth
  • Spread into cereal cups, spreading almost to the edge
  • Garnish each cup with whole peanuts
  • Chill, covered, until serving
